Mango Persimmon Smoothie

The weather is starting to change a bit here on Jeju Island and aside from the fall colors, I also love all the seasonal fruits South Korea has to offer. Persimmons are in season here and they are one of my all time favorite fruits. I used a couple to make a very simple, yet killer smoothie. It is still early in the season, but I was happy be able to enjoy them sooner, rather than later. Persimmons are loaded with fiber, vitamin C and antioxidants. For my smoothies, I like using the softer ones, but I like eating  it as it is, too. Don't be shy to try them if you see them in your local grocery store, the cruncher ones tastes like they have hints of cinnamon in its flavor, but that might just be me :)  Anywho, check out my recipe and add other ingredients if you want, I just choose to keep mine super duper simple because I wanted to make sure I was able to taste the persimmons. 2 overripe persimmons 
1 cup frozen mangoes 
1 cup frozen banana 
2 cups water
2 tbs Chia seeds
A pinch of cinnamon
A bit of Natural vanilla


Scoop out the inside of the persimmon with a spoon and place it in a blender with frozen mangoes, frozen bananas, water, cinnamon and vanilla. Cover and puree until it smooth and creamy. Pro Tip: Make sure it is smooth and creamy before adding chia seeds and pulse once more. I hate when my chia seeds are clumped together, which is why I add it at the end.

Persimmon + Frozen Bananas + Honey + Vanilla + Spinach + Yogurt = MAGIC
Persimmon + Frozen Bananas Honey + Ginger + Greek Yogurt = YUMMY
Persimmon + Frozen Bananas + Coconut Cream + ? = BOOMBASTIC
